Recipe with white asparagus in 15 minutes, #15minuteasperge

On 5 April 2018 I was a guest in Rotterdam at the inauguration of the white asparagus season in the Netherlands. They gave me a bag with beautiful and fresh asparagus and here I present my recipe, prepared for the race "publish a recipe in 15 minutes with asparagus".

 

Asparagus mascarpone mousse in Stroopwafel millefeuille

 

Ingredients X 4 people

 

6 Stroopwafel 

500 gr mascarpone

200 g condensed milk

100 gr white asparagus

1 tablespoon of brown sugar

 

Decoration

Salted caramel

12 raspberries

12 blueberries

4 asparagus tips

Flowers of white violets (edible)

Rosemary flowers

 

Cut the asparagus tips and set aside 4, that we will use to decorate.

Boil the rest cut into pieces in water with 1 tablespoon of brown sugar for 3 minutes.

Drain and finely chop the boiled asparagus.

Let it cool in a large plate, it will speed up the cooling.

 

With a sharp, long knife, gently open the stroopwafel in half, exactly where the delicious filling lies, and set aside.

 

In a bowl mix gently with a spoon the mascarpone, condensed milk and cold smoothies asparagus and put in a sac a poche.

 

In the serving dish begin with a layer of stroopwafel.

With the sac a poche distribute small amunts of mousse on the entire surface of the stroopwafel.

Add the second stroopwafel and then another layer of mousse.

Add the last stroopwafel and last layer of mousse.

Decorate with red fruits, powdered sugar and the tip of the asparagus dipped in salted caramel.

 



Spring in Abruzzo - La primavera in Abruzzo (italian version following)


 

 

"I've chosen April and May to bring my Dutch guets to visit the Trabocchi Coast in Abruzzo, because spring is my favorite season, the trees are blooming, the jasmine enchants with its parfume and the blue of the sky blends with the sea that becomes smooth as oil.

 

It's a 4-day trip, where we go to discovery the territory, to live emotions with beautiful landscapes, delicious typical dishes, savoring the slow life style and the warm welcome of the locals.

 

We visit archaeological sites from the Roman age in the city of Lanciano, the beautiful church of San Giovanni in Venere overlooking the Mediterranean in the town of Fossacesia, the D'Annunzio Hermitage in San Vito, a terrace with a gash on the coast over the Trabocchi, were the local poet got inspired for his poems.

 

We go shopping together in local markets, getting the ingredients for our cooking classes, and between the markets we go for our "caffe' espresso", standing at the bar counter to drink our coffee or try an aperitif.

 

We find out what a Trabocco is and how it works, visiting the fisherman bay of Vallevo' when they come back in the morning with fresh fish caught with an ancient sistem with nets.

 

And then we pick lemons and for our recipes from the trees of our B&B, the same fruits that are used for the jams served for breakfast along with homemade bread and oil from their own production.

 

Then there are those moments of relaxation, when we enjoy the sun on the beach, and those magical clear evenings where after dinner we count the stars from the terrace of the B&B."

"Ho scelto aprile e maggio per far conoscere la mia regione agli olandesi.

Perché la primavera è la mia stagione preferita, gli alberi vanno in fiore, il gelsomino incanta col suo profumo e il blu del cielo si fonde con quello del mare che diventa liscio come l’olio.

 

E’ un viaggio di 4 giorni, in cui andiamo alla scoperta del territorio per vivere emozioni con stupendi paesaggi, deliziosi piatti tipici, assaporando la lenta  quotidianità e l’accoglienza calorosa della gente del posto.

 

Visitiamo reperti archeologici dell’epoca dei Romani nella città di Lanciano, la  stupenda chiesa di San Giovanni in Venere che si affaccia sul Mediterraneo nel comune di Fossacesia, l’Eremo Dannunziano a San Vito, una terrazza con uno squarcio sulla costa dei trabocchi dove il famoso poeta locale si ispirava per le sue poesie.

 

Andiamo insieme a fare la spesa nei mercatini locali, scegliendo insieme gli ingredienti per i nostri corsi di cucina, e fra un mercato e l’altro sorseggiamo il vero Espresso, all’italiana, in piedi al banco del bar o proviamo un aperitivo.

Scopriamo cos’è un Trabocco e come funziona e visitiamo la baia dei pescatori di Vallevo’ quando rientrano la mattina con il pesce preso con le reti.

E poi cogliamo limoni e arance per le nostre ricette direttamente dagli alberi del nostro B&B, gli stessi frutti che usano per le marmellate servite a colazione insieme a pane casareccio e olio di produzione propria.

 

Ci sono poi quei momenti di pausa in cui ci godiamo il sole a bordo piscina o direttamente in spiaggia, e quelle magiche limpide sere in cui dopo cena contiamo le stelle dal terrazzo del B&B."
